Eggplant cuit au four

I baked another eggplant for dinner. I seasoned it only with salt and pepper - so good! The thinner part of the fruit resembles chicken in its textures - makes me wonder if I can season it so that my meat eating friends might be fooled...


Step 1: stab eggplant many times


Step 2: create foil cradle for eggplant; bake in oven for 45 minutes @ 400degrees


step 3: split it open and scoop out the insides


step 4: enjoy!! (with seasonings if desired)


Quite delicious and filling I think.
